Chicken Filo Parcels with Leek and Herbs

Here is the latest of our tasty but healthy recipes from Simon Smith, the head chef at Tameside hospital. Today he has whipped up some beautiful Chicken Filo Parcels with leek and herbs.

INGREDIENTS Serves 4

  • 4 Chicken breast fillets (diced)
  • 1 Leek (sliced)
  • 2 Onions (diced)
  • 2 large knobs of Butter
  • 1 tsp English Mustard
  • 1 tbsp Cornflour
  • 100ml full fat Milk or Cream
  • 250ml Chicken stock
  • Chives and Thyme (optional)
  • 1pkt Ready made filo pastry sheets
  • Egg wash

METHOD

  1. Peel and chop leek into thin slices
  2. Dice the chicken and set aside in a bowl.
  3. Melt the butter in the pan and add the chicken – fry gently to allow meat to seal
  4. After 4-6 mins add the prepared vegetables (leeks, onions) to the chicken and stir. Gently
    cook together.
  5. After another 6 mins check the leeks and the onions have gone soft, and also that the chicken is fully cooked.
    Add the chicken stock and allow to simmer gently.
  6. Then mix cornflour with a little water and pour into the pan with the milk or cream.
  7. Add the mustard and simmer for a few minutes until the sauce thickens
  8. Now you have a choice of ways to use the Filo pastry. My pictures show Filo parcels but you can also make a pie and simply add the mixture to a pie dish and crumple the filo on top.
  9. If you’re making parcels it’s best to let the mixture cool for a few hours (or even prep the day before. Then take three sheets of the pastry, add the mixture to the middle and bring the corners together – egg washing as you go.
  10. Place the parcels (or pie) in preheated oven at 180/Gas5 for about 20 mins.
  11. Serve with vegetables.

This dish is light, full of flavour, and nutritionally balanced, providing low levels of fats, and carbohydrates with medium levels of protein, fibre and minerals to provide us with our balanced plate.

Catalan Omelette

Simon Smith,  the amazing Head Chef from Tameside NHS Trust in Manchester, is helping you to lose weight by creating a lovely healthy recipe each week.  This week he has a lovely variation on an omelette for us.

Eggs represent one of nature greatest nutritionally complete food sources.  Each egg contains varied amounts of 13 vitamins and minerals and 6g of protein that our bodies need for growth, maintaining and regulating our internal systems and for brain growth.

In the UK we consume 34million eggs a day.

Eggs always have been and will continue to be an “Eggcellent” culinary choice for any meal.

Simon’s Catalan Omelette

INGREDIENTS

  • 3 medium eggs
  • 10g red onion
  • 30g diced pepper (mixture of colours)
  • 30g chorizo
  • 10g baby spinach
  • small handful chives
  • 1 tsp butter
  • pinch of paprika

METHOD:

  1. Slice and wash the peppers and red onion and place in a bowl.
  2. Slice the chorizo and chives.
  3. In a small jug beat the eggs with a fork, add the chives and paprika to this mix.
  4. Heat a small omelette pan on a medium setting on your hob. At the same time turn on your grill for later.
  5. Melt butter in the pan, then add peppers and onions and allow to fry lightly until the peppers are soft.
  6. Increase the heat slightly and add the chorizo,  cook for 30 seconds.
  7. Remove the pan from the heat and pour the egg mixture into the pan.
  8. With a fork give the mixture a light stir so the mixture spreads over the whole base of the pan.
  9. Return to the heat and allow the omelette to cook and begin to set. After about 20 seconds place the pan under the grill and this will finish the surface of the omelette.
  10. When the surface of the omelette has cooked to a golden brown, loosen the edges of the omelette with a small knife and  your Catalan Omelette should slide nicely onto your plate.

Boot Camp week 2 – overcoming the fear of failure

One of the things I’ve noticed most during nearly 10 years of helping people lose weight is how a lot of them panic when I ask them to set goals. Last week was no exception. Posting a picture and setting goals sent shockwaves through some of the Slimpod community!

In my blog last  week I said this six-week Boot Camp is as much about helping you to overcome what’s been holding you back as it is about helping you to move forward.

For so many people it’s their own mind that’s been holding them back – because they have a fear of failure. So that’s what we’re tackling this week!  Watch my video first and beneath the video there’s some more practical advice to help you overcome your fears.

Beating Fear Of Failure

Because most obstacles in life are in our own heads, I really recommend you read this book (it’s only £6.99 in paperback) or at the very least download the free PDF – and that’s your task this week.

If you buy the book it won’t take more than a couple of hours to read. It has a great method for people who want to change the way they think about obstacles in their lives and it shows you how problems are amazing opportunities to get stronger.

It really helps you realise that success in anything (including weight loss) is not a gift that some people are blessed with, but a path that anyone can go down.

If you have a fear of failing you really must take action. Goals shouldn’t be obstacles, they should be things that allow you to measure your success and progress on to the next level.

If you haven’t reached a goal, then you need to dig deeper and find out why rather than letting fear take control.

Motivation is paralysed by fear. Decide what you want of the world and go get it. No clarity = no change and no goals = no growth.

Boot Camp kicks off with important goal-setting advice

HEY! Welcome to my six week “Get Ready for Summer” Boot Camp! The words “Boot Camp” can sometimes be scary, so first of all I want to assure you that the next six weeks are going to be a very positive, enjoyable and motivational experience!

The only condition of joining in is that I’d like you to pledge your commitment for six weeks.

This is not like the average Boot Camp.  I don’t tell you what you should and shouldn’t eat.  I don’t tell you to exercise. That wouldn’t be my style.

You’ll be learning some important things that will have been holding you back from losing weight in the past and when you smash through these obstacles, there’ll be no stopping you! You’ll lose inches and have fun along the way.

It’s really important that you discipline yourself to look in your Inbox (or other places like Promotions or Updates folders).

If you’re a Slimpod Club member you can also look there for updates because no-one will chase you.  This is all about you!

So here we go!

Week One is dedicated to getting you off to a great start.

So here’s what needs to happen this week!

Three simple steps

  1. Take a full-length picture of yourself (in clothes!). Keep it safe on your phone so you can look at it in the weeks to come. This is SO important because it helps you track your progress.  If you’re in Slimpod Club – post it up there too because it’s good for everyone to put a face to a name.  We love seeing you!
  2. Measure yourself because this is far more reliable than the scales.
  3. Set good goals

Many people struggle with how to set goals so here’s a recap.

When you’re creating your goal, please make sure it’s meaningful – knowing “why” you want this goal is essential because that’s what’s going to drive you for the next six weeks.

More information on goals is in my Week One video below.

Some more ideas:

  1. Staying with this Boot Camp has to be on top of this list!
  2. A size goal – what do you want to achieve in six weeks? What’s realistic? The next size down would be a great goal and for most people that’s achievable in six weeks.
  3. A happiness goal!  This is a great goal – track how you’re feeling about yourself. When you’re feeling happier and more confident it’s hugely empowering and motivating. Slimpod will help you with this.
  4. An energy goal –  embrace the lovely long evenings and do a power walk three evenings a week. Track your progress – this is such a wonderful motivator.

BIG NOTE** A weight goal’s really not ideal because weight fluctuates for many reasons and it means you’re using the evil scales to track your progress.  Scales make you feel bad more often than they make you feel good – and we don’t want that! This is about feeling GOOD!

Remember:  The brain likes reward, so be nice to yourself and take this in small steps.  Take it week by week and set yourself small targets to achieve by the end of each week. 

Writing in your success log each day could be one of them.  Being consciously aware of your sugar intake could be another.  It’s recommended we only have seven tsps of sugar a day and it’s estimated the average adult consumes over 20 tsps!

Important!

Some people are scared to set goals because in the past they’ve failed to achieve them. If that’s you, then think of your goal as something that gives you feedback rather than meaning failure.

A goal should be something that helps to plot your course to ultimate success, rather than a big obstacle that creates fear!  Next week I’m giving you some help with fear of failure so help is at hand!

It’s a fact that making the goal public helps you to commit – so post your goal(s) under the Boot Camp post on my blog AND/OR in Slimpod Club under the post.  You can also ask others if they’d like to form a team which would help to keep you accountable.

And remember my weekly live chat (on Wednesday evenings at 8pm BST)  will be your chance to regroup with everyone and for us all to do some cheer-leading! Every little success counts!

Week by week we’ll develop this by building on your successes. This is how good habits are built.

Sammie’s Salad Fruits de Mer with Pink Goddess Dressing

As part of our partnership with Tameside NHS trust, we have enlisted the services of their head chef Simon Smith. He is going to create some heathy recipes for our healthcare workers as they take part in their 12 week Slimpod Gold programme.  Here is his first creation – a delicious fish salad with a tangy dressing. Bon Appetit!

Sammie’s Salad Fruits de Mer with Pink Goddess Dressing

INGREDIENTS  (serves 4)

  • 100g Rocket (pre-washed)
  • 100g Baby spinach (pre-washed)
  • 100g Cos lettuce (pre=washed)
  • 100g Red chard leaf (pre-washed)
  • 150g diced red onion
  • ½ pkt Cherry tomatoes
  • ½ tsp Crushed garlic
  • ½ Cucumber
  • 30g Shaved Parmesan
  • 100g Salmon
  • 100g smoked salmon
  • 100g cold water prawns
  • 1 fillet peppered, smoked mackerel
  • 1 peeled, sliced apple
  • 5g melted butter
  • 5g olive oil
  • 2 slices bread
  • 1 large mid-ripe avocado
  • Bay leaves

 

FOR THE PINK GODDESS DRESSING

  • 120ml natural yogurt
  • 20ml wine vinegar
  • 1tbsp chopped parsley
  • 1tbsp chopped chives
  • 1tbsp chopped dill
  • 1tbsp anchovy essence/fish sauce
  • ½ tsp crushed garlic
  • ½ tsp tomato puree
  • ½ tsp mustard or mustard powder
  • seasoning
  • 1 fresh lemon

 

METHOD

  1. Place the salmon steak into a tray add cold water, seasoning, lemon juice and a bay leaf.
  2. Place into a pre heated oven on 175C / GAS mark 4, for 10 min, or until fish is cooked. When cooked transfer to a plate and allow to cool.
  3. Cut the smoked salmon into strips, wash the prawns,  skin and flake the smoked mackerel and  set aside.
  4. Cut your cherry tomatoes into halves and set aside.
  5. Peel the cucumber and dice into fork size pieces.
  6. For the croutons, when the salmon is cooked turn up the oven to 195C / GAS Mk 5. De-crust the bread and dice into small cubes. Mix the melted butter and olive oil together add ½ tsp chopped garlic and season.
  7. Stir the butter mixture into the diced bread, allowing all the cubes to be coated. Place on an oven tray and in the hot oven for 10min.  When completed remove from oven, transfer the items and set aside.
  8. Peel and dice the red onion and set aside
  9. Peel and slice the apple coating it with lemon juice to stop it going brown. This should be set aside as well.
  10. To make the dressing, combine the vinegar with herbs, crushed garlic, anchovy essence, juice of ½ lemons and zest of ¼ lemon and mustard and tomato puree.
  11. Whisk until all ingredients combine and add the natural yoghurt and fold into the mix.
  12. Split the avocado, remove the stone and dice into large pieces and set aside
  13. In a clean bowl place the rocket, baby spinach, red chard. Add the torn leaves of the cos lettuce to the bowl.
  14. To this add diced onions, chopped cucumber, halved cherry tomatoes, chopped avocado and shaved parmesan cheese (optional)
  15. Add the flakes of fresh salmon and smoked mackerel, strips of smoked salmon, and finally the baby prawns
  16. Layer the sliced apple over the salad and finish with the garlic croutons.

Serve with a pot of pink goddess dressing and a wedge of lemon on the side.

Shape up with Summer Boot Camp

MY super Summer Boot Camp starts on June 12! Get set for summer by taking part in my six week challenge – could this be the push and focus you need to get into those summer clothes? Take some action and boost your motivation.

It’s all very simple (of course!).   Every Monday for six weeks I’ll post a blog which contains motivational tips and tasks for you to follow for the week.

I’ll give you a clue, the tips and tasks are NOT about going down to the gym and doing lots of exercise! Believe it or not, studies have proven that exercise only accounts for 10 per cent of weight loss.

You’ll receive a link to the blog by email and you can take part on your own at home or If you are part of the private  Slimpod Club on Facebook you can join in with the rest of the community.

The challenge contains motivational videos,  tips and tasks delivered every week for six weeks. If you’re joining the fun via Facebook then join the thread beneath the blog post and hold yourself accountable by posting your goals for the six weeks.

Remember, goals are important but they shouldn’t be obstacles.  Use them as something that will give you direction and feedback (my first blog on Monday June 12 will explain more!).

Of course, you can buddy up in pairs or groups and start your own thread – it’s always fun doing this challenge with others.

So let’s get some energy going The idea is to keep listening to your Slimpod  and stay engaged in the Boot Camp for the whole six weeks.

When you do this you’ll create consistently good eating habits, improve your health and be well on your way to achieving sustainable weight loss.

So put June 12 in your diary and let’s get set for Summer!
